From time to time, the ،y craves so،ing sweet – usually when your energy levels are low and you feel tired. When I’m busy or working out a lot, I like to have some Date Energy Bites made from my recipe in Eat Beautiful ready on hand as a healthy alternative for whenever I need a quick pick me up.
Dates come into season in Autumn so it’s usually reserved for this season with my seasonal eating philosophy, but if you have some in the store cupboard, this makes a great any-time go-to. Dates also make a great natural alternative to refined sugar. My date energy ، are so quick and easy to make and they taste amazing too – they still feel like an indulgent treat!

Date energy bites
Makes 10
160 calories per ball
120g pitted dates
120g dried apple rings
120g unsalted dry-roasted almonds
120g gluten-free rolled oats
1 tbsp maple syrup
1 tsp ground cinnamon
Handful of pistachios, finely c،pped
- Cover the dates in ،t water and leave to soak for 10 minutes to soften. Drain and squeeze out any water.
- Place in a food processor with all the remaining ingredients except the pistachios, add 1 tables، of water and blend until the mixture turns into a paste with a sticky, dough-like consistency. Add another tables، of water to loosen further, if needed.
- Scoop out tables،s of the mixture and, between clean, wet hands, roll into ten ،. Tip the pistachios into a bowl and roll each ball in the nuts to coat.
- Store in an airtight container in the fridge of freezer.
